Vanilla Blueberry Bowl Cake

Craving a dessert in hurry? Microwave cake is a quick and easy dessert that you can make only for yourself (How handy are single servings!). It can be baked in a bowl or you may also use a mug, just use big enough as the cake will rise a lot in a microwave.

 

 

Ingredients for one bowl cake:
1 scoop (approx. 30grams) vanilla protein powder (I used white chocolate flavor from MyProtein)
1/2 tsp baking powder
1 1/2 tbsp almond flour
1 tbsp granulated sweetener of choice (I used erythritol)
1 large egg
1/2 dl milk of choice (I used unsweetened almond)
1/4 tsp vanilla extract
10-15 blueberries

 

Instructions:
• Using a microwave safe bowl, add the protein powder, baking powder, almond flour, sweetener of choice into it and mix well.
• Add the egg into the dry mixture and mix carefully.
• Add the milk of choice and vanilla extract. (If batter is too crumbly, continue adding milk of choice)
• Stir in blueberries.
• Microwave for 60-120 seconds (depends on the efficiency of you microwave), or until just cooked in the centre. Don’t over bake or the result will be dry!
• Enjoy immediately!
