Tropical Overnight Oats
Have you already tried overnight oats? They are perfect and delicious solution to fuel your day healthily, without having to get up super early in the morning to prepare breakfast. The flavor combinations are endless, so you don’t get tired with them. What I also love about overnight oats is that you can make a big batch of these oats at the beginning of the week, and then store in the fridge for up to five days. What a time saver for the mornings!
The idea behind this no-bake recipe is that you just stir together all the ingredients, and then leave it all in the fridge for overnight. This long soaking time allows the liquid to soak up the flavor and soften those oats, so there’s no need for any sort of cooking. Fresh fruit, coconut and chia seeds add fiber and nutrients as well as flavor into this grab-and-go breakfast, and you can always add some protein powder for extra protein if desired!
Ingredients for one serving:
1.5 dl old-fashioned rolled oats (you can always use gluten-free if needed)
1.5 dl milk of your choice (if you want real tropical vibes, use coconut milk)
1 tablespoon chia seeds
1 tablespoon maple syrup or honey (or whatever sweetener you prefer)
1-2 tablespoons shredded coconut (depends on how big friend of coconut you are)
1 nectarine/ peach/ 1.5 dl pineapple or mango, chopped
1. Stir all ingredients together in a pint-sized mason jar or some other jar with a lid. Also a basic breakfast bowl will work, just cover it with cling film or plastic bag.
2. Cover with a lid and store in a fridge overnight.
3. In the morning, if desired, top it with your favorite fresh, diced fruits, nuts or nut butter. Serve and enjoy!
Tip! You can also add fruit ahead of time to save an extra step in the morning!
