Simple Raw Fudge

Want something sweet but healthy with your afternoon coffee? Or are you a fudge lover like I am, but don’t want to ruin your diet with all the added sugars that the original version has? This raw fudge is quick and easy to prepare and it’s for sure much healthier than its original version. All you have to do is mix everything together and then freeze. That’s it!



2 dl natural nut butter (I used cashew butter this time, but also almond butter and peanut butter are really good options)
1-2 tbsp maple syrup, raw honey, or sweetener of choice
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
1/2 dl coconut oil, softened

1 1/2 tbsp cacao powder for chocolate version
1/2 dl chocolate flakes for really chocolaty version
1/2 dl dried fruits chopped in tiny cubes for fruity version
1 1/2 tbsp some berry powder for berry version
1/2 dl shredded coconut for coconutty version


• Combine all of the ingredients in a small bowl and mix with a large spoon until a smooth batter forms. If you want to add some “extra flavour”, do it now and mix well.
• Transfer the batter to a dish lined with parchment paper, and smooth with a spatula or a back of spoon. You can also use silicone chocolate molds or ice cube trays.
• Place the dish in the freezer, and allow to set at least 30 minutes, or until firm.
• Cut into squares or pop the fudge out of the molds and serve immediately!

Store fudge in freezer if you like “harder” ones and in fridge if you like “softer” ones. This fudge is temperature-sensitive, so be sure to keep it stored in the freezer until right before serving!
