Raw licorice fudge
I had already forgot, that I bought Urtekram’s raw licorice powder during our last visit in Finland and oh what a happy day it was when I found it again! Of course, I had to try it immediately and as I am a true fudge and licorice lover, I decided to combine these two. I haven’t found any decent licorice let alone salty licorice from here, so this was a very successful and welcome sweet treat to our home 😉 .
Ingredients (16 squares):
2 1/2 dl nut butter or seed butter of your choice (I used almond butter)
3/4 dl coconut oil, melted
2-4 tsp (raw) licorice powder
1 – 2 tsp vanilla extract
1-3 tbsp sweetener of your choice; maple syrup, honey, coconut sugar, erythritol for sugar free version (blend it to powder)
- Mix together the almond butter and coconut oil in a bowl until smooth. (This works best if the ingredients are at room temperature or slightly warm. Heat in a microwave for couple of seconds, if it’s hard to mix them.)
- Add in the licorice powder and vanilla and stir until smooth and creamy. Taste and add sweetener of your choice little by little. I used only one tbsp as I don’t like super sweet treats, but love the taste of licorice 😉 .
- Transfer the mixture to a small square dish (mine was 15 x 15 cm), lined with parchment paper for easy removal, and smooth the top with a spoon.
- Place the dish in the freezer and allow the fudge to set for at least an hour before slicing and serving. Best served directly from the freezer as it melts quite quickly.
Store the leftovers in a sealed container in the freezer up to 3 months.
