Frozen Nutty Banana Nibblers

Who else loves bananas combined with nut butter? These frozen nibblers make a much healthier alternative on a sunny summer day for example to ice cream, and because they’re bite-sized, they’re perfect sweet treats with a cup of coffee whenever your sweet-tooth cravings strike.

You can use whatever nut butter you happen to have and prefer, all of them will work perfectly. Most of the times I use peanut butter, but this time I had homemade cashew nut butter waiting in a jar (you’ll find my homemade nut butter recipe here), and I have to admit that it was heavenly good!

For 15-20 pieces you’ll need:
2 medium sized ripe bananas
2-4 tablespoons of natural nut butter of your choice (creamy or crunchy)
chocolate of your choice (raw chocolate works as well)
shredded coconut, chopped nuts, cacao nibs or whatever toppings you prefer (optional)

1. Peel and chop a banana or two in slices, put on top of half of the pieces a little bit of peanut butter and then another slice of banana.
2. Melt chocolate and decorate these banana-peanut treats with it. If you like, before the chocolate sets, sprinkle on toppings like shredded coconut or chopped nuts. 
3. Place on a cutting board or a plate and freeze for at least three hours.
4. Store them in the freezer, and let them stay on a table for 5 minutes before you enjoy them (In my opinion the flavors are much stronger, when they aren’t completely frozen).
