Cookie Dough Slices
This edible (raw) cookie dough slices recipe is so easy to make because it only has a few ingredients, its packed with protein and it takes minutes to come together. Mix, freeze, drizzle with chocolate and enjoy. There’s really no reason there shouldn’t be a giant box of these sweet treats in your freezer at all times!
And few words about that maca powder: The use of powder is not mandatory for the end result, but it brings real superfood powers in these slices. Maca powder is an excellent source of vitamins and minerals, like vitamin C, copper, zinc, calcium, and iron. It also contains all eight essential amino acids and plenty of phytonutrients, so if you have it in your pantry, use it.
Ingredients for 6 pieces:
1 dl coconut flour
1 scoop (30g) protein powder, vanilla flavor
1/2 dl nut butter of your choice
1/2 – 3/4 dl unsweetened almond milk
1 tbsp maple or agave syrup, honey works as well
Optional but suggested:
2 tsp maca powder
30 g (raw) chocolate of your choice melted, the darker the better
approx. 1 tbsp coconut oil melted
handful nuts of your choice, chopped in tiny pieces
- Combine all the ingredients in a bowl. The dough should be like play-dough, add more milk if needed.
- Press dough firmly in silicone muffin cups. You can also line small pan/ plastic container with baking paper and make one big plate and cut it later on pieces.
- Freeze at least 1 hour and pop slices out from muffin cups or cut in six pieces.
- Topping: Melt chocolate and coconut oil and mix well. Drizzle mixture on top of the slices and sprinkle immediately with chopped nuts before chocolate hardens.
Store in a sealed container in the freezer, let thaw 10 minutes before eating.
