Spicy lentil and tomato soup
This simple but addictive lentil soup recipe is something you have asked for, and it comes together quickly almost itself. I really like the texture of this soup, but if smoother soups are more your thing, please puree it with a hand blender before serving.
2 red onions, finely chopped
2 garlic cloves, finely chopped
2 teaspoons paprika powder
1-2 teaspoons chili powder
1.5 dl rinsed lentils
500 g crushed tomatoes
5 dl water
fresh basil leaves
0.5 mozzarella / serving (or cottage cheese or seed mixture)
• Heat the oil and sauté onions in a large saucepan.
• Add all the remaining ingredients to the pan, mix well and heat it.
• Half cover pan with a lid and simmer for 45 minutes until everything is soft.
• (Puree with hand blender at this point if needed)
Serve with fresh basil and mozzarella or for healthier version with cottage cheese.
