Protein Berry Pie

A quark pie is an old classic, but unfortunately it’s far from healthy, despite of the protein packed quark. But hey, you just found the best recipe for quark pie, that is healthy, delicious and full of proteins. It doesn’t contain oils or white sugar, and you can prepare it gluten-free, if necessary!

If you prefer another flavor, you can always replace blueberries with some other berries or fruits, like raspberries or mango and pears. This time I used both blueberries and raspberries, because our son insisted 😉 .

 Pie crust:
1 dl rolled oats
pinch of cinnamon
pinch of vanilla powder
1/2 tsp cardamom
1/2 dl oat flour (gluten free alternative: almond flour or gluten free flour mixture)
2-3 tsp sweetener (honey, coconut sugar, maple syrup, agave syrup, stevia, xylitol… The amount depends on what sweetener you are using)
1 egg
1 dl natural (non-fat) quark

Filling:
2.5 dl natural (non-fat) quark
1 egg
2-3 tsp sweetener (honey, coconut sugar, maple syrup, agave syrup, stevia, xylitol… The amount depends on what sweetener you are using)
2-3 dl blueberries (you can also use other berries or fruits)

Instructions:
• Preheat the oven to 175-200 degrees C.
• Mix all the ingredients of the pie crust together in a bowl.
• Oil the pie tin (you can also use spring form baking tin) or place the baking paper in the bottom of it. Pour the batter into the pie tin and mold the crust evenly. Bake in oven for approx. 15-20 minutes.

The healthy and tasty crust is ready, now onto the delicious protein filling.

• Mix all the ingredients for the filling and pour the mixture over the pre-baked crust steadily.
• Bake in oven at 175 degrees for approx. 15-20 minutes.
• Allow to cool for at least 15 minutes before removing from the tin.

Serve warm or fridge cold, I think I prefer cold one 😛 .
