Easy Breakfast Banana Bread

Banana bread that is as healthy option as your normal bowl of oats with your favorite toppings? Yes, this bread is exactly what you are looking for! Tasty, moist, no hard-to-find ingredients, done in minutes and freezes well. Just throw everything in a blender, bake and enjoy!

2 ripe bananas
2 dl rolled oats (use gluten-free if needed)
1 scoop (30g) vanilla flavored whey protein
approx. 3 dl almond milk, light coconut milk or oat drink
1 tsp baking powder
1 tbsp of psyllium
plenty of cinnamon (I used 1-2 teaspoons)
a pinch of salt
1 tbsp natural peanut butter
3 Medjool Dates, pitted (If you use smaller and drier ones, soak them before use)
(A handful of nuts, if you want. The original recipe doesn’t require them, but I love nuts, so why not!)
• Pre-heat the oven 200C.
• Just put everything in a blender and let it run until smooth.
• Pour the dough into a silicone loaf pan or grease normal one.
• If you use nuts, place them on top of the loaf at this point.
• Bake in the oven 25-30 minutes and let it cool for a while before slicing.
Store bread in a tightly sealed container in a fridge for up to five days. Freezes well too – slice before freezing for a quick and easy toast!
